Paushtik Poha Phirni

I couldn't resist.....the title that is...
oh yes! and the phirni too.. :)

It is super quick and easy to make and substitutes rice with poha. I was just happy to have a 5 minute dessert recipe on hand and was not even aware of the benefits of poha until I read Sangeeta's ( Healthfood Desividehi) post about it. You can make it healthier by reducing the sugar and adding fruits on top instead. I have plans to make this with some mango puree very soon.

Ho-Hum

Yup, that's how my life has been last few days and that has been the reason for not posting regularly.There is  It's the same routine day in and day not, get up, cook, get ready, get the toddler ready, rush to office, work, rush home, play with toddler, clean up and sleep, then get up again rinse and repeat. Did you notice there is no mention of exercise anywhere? Well, frankly because there isn't any happening, except for swimming on the weekends and to be honest I am not even trying. I don't know if it's the summer heat, feeling of being stuck in a routine, irritation of things not going according to plan, I am just not feeling up to any sort of physical activity these days :(. I am working on getting out of this rut, but it doesn't seem to be happening as soon as I expected. *sigh*. 
Sorry for such a negative post, but it is what it is. Hopefully should be back in better spirits soon. 
In the meantime, let me bombard you with a few of my experiments in the kitchen, because cooking seems to be my new therapy :)
